Origin and taste
Char Siu (translated as “grilled on a fork”) is one of the oldest and most famous dishes of Cantonese cuisine . It has been used since ancient times in street markets – strips of meat are grilled over an open fire, coated in a sweet marinade and hung in a display case to drip temptingly. The essence of the taste:
Caramelized sugar or honey
Garlic and onion
A subtle hint of tartness
Balance of soy, five-spice and salt
Useful tips
Before cooking, let the meat warm up slightly to room temperature.
You can also use it in a pan if you don't have an oven - it's important to turn it frequently.
Use the remaining marinade for glazing – this will add extra shine and flavor.
POR KWAN – a true Chinese taste that is easy to recreate at home.
